We add a button to your compose window. When replying, you can highlight text you want to respond to, push our button, and we'll add the quoted text right in your compose view. Also, you might like my other extension, which lets you take notes from your tab: https://chrome.google.com/webstore/detail/jotter/icdbglcdnjonofjpcfpcgpjjchokgnjl

Simple, Clean, Effective. LOVE IT
It works. When you reply and the recipient reads the email sees the highlighted area knowing that it has been quoted but if you the recipient opens the email in a third party mobile app (other that Gmail app, specifically Spark App), it just displays as regular text, not even in quotes or brackets. Still is a great tweak. Thank you.
I love it, should totally be a default feature in Gmail. Is there any way to map a keyboard shortcut, to avoid having to scroll down to hit the Quote button below the compose window?
